Strawberry Vanilla Keto Cupcakes


For the Cupcakes:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol or your preferred keto-friendly sweetener
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/2 cup chopped fresh strawberries

For the Vanilla Buttercream Frosting:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup powdered erythritol or your preferred keto-friendly powdered sweetener
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy whipping cream

Optional Toppings:

  • Sliced strawberries for garnish


For the Cupcakes:

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a mixing bowl, whisk together almond flour, coconut flour, sweetener, baking powder, and salt.
  3. In a separate large mixing bowl, cream together the softened butter and sweetener until light and fluffy.
  4. Add the eggs, almond milk, vanilla extract, and almond extract (if using). Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until the batter is smooth.
  6. Gently fold in the chopped strawberries.
  7. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  8. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  9. Allow the cupcakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.

For the Vanilla Buttercream Frosting:

  1. In a mixing bowl, beat the softened butter until creamy.
  2. Gradually add the powdered sweetener and continue to beat until well combined and fluffy.
  3. Mix in the vanilla extract and heavy whipping cream until smooth.
  4. Once the cupcakes are completely cool, frost them with the vanilla buttercream using a piping bag or a spatula.
  5. Optional: Garnish with sliced strawberries.
