Ingredients:

  • 1/4 cup coconut flour
  • 1/4 cup erythritol or your preferred keto-friendly sweetener
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt

  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/2 cup chopped fresh strawberries

  • 1/2 cup unsalted butter, softened
  • 1/2 cup powdered erythritol or your preferred keto-friendly powdered sweetener
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy whipping cream

Instructions:

For the Cupcakes:

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a mixing bowl, whisk together almond flour, coconut flour, sweetener, baking powder, and salt.
  3. In a separate large mixing bowl, cream together the softened butter and sweetener until light and fluffy.
  4. Add the eggs, almond milk, vanilla extract, and almond extract (if using). Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until the batter is smooth.
