Ingredients:
For the Pavlova:
- 4 large egg whites, at room temperature
- 1 cup granulated sugar
- 1 teaspoon white vinegar
- 1 teaspoon cornstarch
- 1 teaspoon vanilla extract
For the Toppings:
- Whipped cream
- Fresh raspberries
- Mint leaves (optional)
Instructions:
- Preheat the Air Fryer: Preheat your air fryer to 300°F (150°C).
- Prepare the Pavlova Mixture:
- In a clean, dry bowl, beat the egg whites using an electric mixer until soft peaks form.
- Gradually add the sugar, one tablespoon at a time, while continuing to beat the egg whites. Continue beating until the mixture is glossy and stiff peaks form.
- Add the vinegar, cornstarch, and vanilla extract. Gently fold them into the egg white mixture until well combined.
- Shape the Pavlova:
- Line the air fryer basket with parchment paper.
- Spoon the pavlova mixture onto the parchment paper, forming a circular shape. Use the back of a spoon to create a well in the center for holding the toppings.
- Air Fry the Pavlova:
- Place the pavlova in the preheated air fryer and cook at 300°F (150°C) for about 25-30 minutes or until the pavlova is crisp on the outside and marshmallow-like on the inside.
- Cooling:
- Allow the pavlova to cool completely in the air fryer with the door slightly ajar. This helps prevent cracking.
- Assemble the Pavlova:
- Once the pavlova has cooled, carefully transfer it to a serving plate.
- Fill the well in the center with whipped cream and top with fresh raspberries.
- Optionally, garnish with mint leaves for added freshness.
- Serve:
- Slice and serve the air fryer raspberry pavlova immediately.
