Ingredients:

For the Pavlova:

  • 4 large egg whites, at room temperature
  • 1 cup granulated sugar
  • 1 teaspoon white vinegar
  • 1 teaspoon cornstarch
  • 1 teaspoon vanilla extract

For the Toppings:

  • Whipped cream
  • Fresh raspberries
  • Mint leaves (optional)

Instructions:

  1. Preheat the Air Fryer: Preheat your air fryer to 300°F (150°C).
  2. Prepare the Pavlova Mixture:
    • In a clean, dry bowl, beat the egg whites using an electric mixer until soft peaks form.
    • Gradually add the sugar, one tablespoon at a time, while continuing to beat the egg whites. Continue beating until the mixture is glossy and stiff peaks form.
    • Add the vinegar, cornstarch, and vanilla extract. Gently fold them into the egg white mixture until well combined.
  3. Shape the Pavlova:
    • Line the air fryer basket with parchment paper.
    • Spoon the pavlova mixture onto the parchment paper, forming a circular shape. Use the back of a spoon to create a well in the center for holding the toppings.
  4. Air Fry the Pavlova:
    • Place the pavlova in the preheated air fryer and cook at 300°F (150°C) for about 25-30 minutes or until the pavlova is crisp on the outside and marshmallow-like on the inside.
  5. Cooling:
    • Allow the pavlova to cool completely in the air fryer with the door slightly ajar. This helps prevent cracking.
  6. Assemble the Pavlova:
    • Once the pavlova has cooled, carefully transfer it to a serving plate.
    • Fill the well in the center with whipped cream and top with fresh raspberries.
    • Optionally, garnish with mint leaves for added freshness.
