vegan chocolate chip

Ingredients:
1 cup vegan butter or coconut oil (softened)
1 cup brown sugar (packed)
1/2 cup granulated sugar
1/4 cup non-dairy milk (e.g., almond, soy, oat)
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups vegan chocolate chips
Instructions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened vegan butter (or coconut oil) with the brown sugar and granulated sugar until well combined.
Stir in the non-dairy milk and vanilla extract until the mixture is smooth.
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Fold in the vegan chocolate chips until they are evenly distributed throughout the dough.
Using a tablespoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, leaving enough space between each cookie.
Gently flatten each cookie with your fingers or the back of a spoon.
Bake the cookies in the preheated oven for 10-12 minutes or until they are lightly golden around the edges.
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
