Vegan deli meat

Ingredients:
1 cup vital wheat gluten
¼ cup nutritional yeast
2 tablespoons chickpea flour (also known as besan or gram flour)
2 tablespoons tomato paste
1 tablespoon soy sauce or tamari
1 teaspoon smoked paprika
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon dried thyme
½ teaspoon dried rosemary
½ teaspoon ground black pepper
¾ cup vegetable broth or water
2 tablespoons olive oil
Instructions:
In a mixing bowl, combine the vital wheat gluten, nutritional yeast, chickpea flour, smoked paprika, onion powder, garlic powder, dried thyme, dried rosemary, and ground black pepper. Mix well to combine all the dry ingredients evenly.
In a separate bowl, whisk together the tomato paste, soy sauce or tamari, vegetable broth or water, and olive oil until well combined.
Pour the wet ingredients into the bowl with the dry ingredients. Stir until a dough forms.
Knead the dough for about 2-3 minutes until it becomes elastic. If the dough is too wet, add a little more vital wheat gluten. If it’s too dry, add a bit more vegetable broth or water.
Shape the dough into a log and wrap it tightly in aluminum foil.
Steam the wrapped log in a steamer basket for about 45-50 minutes.
