Ingredients:

  • 1 cup egg whites
  • 4 large eggs
  • 1 cup fat-free Greek yogurt
  • 1 cup diced bell peppers (any color)
  • 1 cup diced tomatoes
  • 1 cup diced spinach or kale
  • 1/2 cup diced red onions
  • 1/2 cup diced mushrooms
  • 1 teaspoon olive oil
  • Salt and pepper, to taste
  • Fresh herbs (such as parsley or chives) for garnish

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare Vegetables:
    • In a skillet, heat 1 teaspoon of olive oil over medium heat. Add diced bell peppers, tomatoes, spinach or kale, red onions, and mushrooms. Cook until the vegetables are softened. Set aside to cool.
