Ingredients:
- 2 cups thinly sliced lean beef (such as beef round or sirloin)
- 2 tablespoons olive oil (or cooking spray for a lighter option)
- 2 tablespoons all-purpose flour
- 2 cups unsweetened almond milk (or other low-fat milk)
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon paprika
- 8 slices of whole-grain or whole-wheat toast (choose a lower-point bread option)
Instructions:
- In a large skillet, heat the olive oil over medium-high heat. If you want a lower-fat option, you can use cooking spray instead.
- Add the thinly sliced beef to the skillet and cook until it’s no longer pink. Drain any excess fat.
- Sprinkle the flour over the beef and stir to coat evenly. Cook for a couple of minutes to remove the raw flour taste.
- Gradually whisk in the unsweetened almond milk or other low-fat milk to make a smooth sauce.
- Season the sauce with black pepper, salt, and paprika. Stir well.
- Cook and stir until the sauce thickens and comes to a gentle simmer. This should take about 5-7 minutes.
- If the sauce becomes too thick, you can add a little more milk to achieve your desired consistency.
- Serve the creamed chipped beef over slices of whole-grain or whole-wheat toast. You can toast the bread for added texture.
