Ingredients:

  • 2 cups thinly sliced lean beef (such as beef round or sirloin)
  • 2 tablespoons olive oil (or cooking spray for a lighter option)
  • 2 tablespoons all-purpose flour
  • 2 cups unsweetened almond milk (or other low-fat milk)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon paprika
  • 8 slices of whole-grain or whole-wheat toast (choose a lower-point bread option)

Instructions:

  1. In a large skillet, heat the olive oil over medium-high heat. If you want a lower-fat option, you can use cooking spray instead.
  2. Add the thinly sliced beef to the skillet and cook until it’s no longer pink. Drain any excess fat.
  3. Sprinkle the flour over the beef and stir to coat evenly. Cook for a couple of minutes to remove the raw flour taste.
  4. Gradually whisk in the unsweetened almond milk or other low-fat milk to make a smooth sauce.
  5. Season the sauce with black pepper, salt, and paprika. Stir well.
  6. Cook and stir until the sauce thickens and comes to a gentle simmer. This should take about 5-7 minutes.
  7. If the sauce becomes too thick, you can add a little more milk to achieve your desired consistency.
  8. Serve the creamed chipped beef over slices of whole-grain or whole-wheat toast. You can toast the bread for added texture.
