WW GRILLED CHICKEN SALAD
Ingredients:
For Grilled Chicken:
- 1 lb boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
For Salad:
- Mixed salad greens (lettuce, spinach, arugula, etc.)
- Cherry tomatoes, halved
- Cucumber, sliced
- Red onion, thinly sliced
- Bell peppers, sliced
- 1/4 cup reduced-fat feta cheese, crumbled
For Dressing:
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper to taste
Instructions:
- Preheat the grill or grill pan to medium-high heat.
- In a bowl, combine olive oil, garlic powder, paprika, salt, and pepper. Coat the chicken breasts with this mixture.
- Grill the chicken for about 6-8 minutes per side or until fully cooked (internal temperature reaches 165°F or 74°C). Cooking time may vary depending on the thickness of the chicken breasts.
- While the chicken is grilling, prepare the salad by combining mixed greens, cherry tomatoes, cucumber, red onion, bell peppers, and feta cheese in a large bowl.
- In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper to make the dressing.
- Once the chicken is done, let it rest for a few minutes before slicing it into thin strips.
- Add the grilled chicken strips to the salad.
- Drizzle the dressing over the salad and toss gently to combine.
